Peppermint White Hot Chocolate

Those who are on the Low Oxalate Diet know that chocolate is not allowed. It sadly has far too many oxalates. However, white chocolate is allowed!  It isn’t the same thing but it is rich and tasty and makes a great hot winter drink.  I almost don’t miss the brown stuff.  

My kids had this for the first time today.  I made it for them last week but drank it all before they appeared.  Oops!  They liked it a lot and I love how quick and easy it is and it is filled with healthy foods and even some sneaky gelatin!  

 
Peppermint White Hot Chocolate

I make this in a wide mouth mason jar with a KitchenAid Hand Blender.  You can also make it in a regular blender.  Just be sure to hold the lid on while you are blending. The steam from the hot water can push the lid off most blenders.

Place all of the ingredients except for the hot water into jar or blender.  Add the hot water and blend immediately.  Pour into glasses and enjoy.  This makes about three 8 oz servings.

This would be wonderful with some Thumbprint cookies or Cut Out Cookies. I bet Santa would be glad for such a healthy treat on his long trip.

    BTW: I went to become BeYoung sharing partners BUT they ask for your SS#. I’m not keen on giving that out. I might buy but as just a customer.

    • Yes they do ask for your SSN. That is because as a sharing partner you have the potential to make money from the company and they need that number to report your earnings for tax purposes.

  3. I have to order cocoa butter wafers before trying this. But I have plenty of coconut cream. Do you think I could sub it for the cocoa butter? (I’m a coconut lover so wouldn’t mind more flavor.)
    BTW: The Amazon link for the vanilla doesn’t seem to work. It’s pulling up a stored shopping cart of mine but no vanilla.

A honey question for you… I try not to heat my honey since I know it destroys some of its benefits- would there be a way to try this that didn’t heat the honey or did you experiment with that? :) Perhaps could it be added when the drink is served and has cooled off? Thanks this looks amazing! :)

    • You could certainly stir in the honey after it has cooled, however it is my understanding that if honey gets over 90 it destroys the enzymes and at that point it will be lukewarm so you will have to choose what is more important to you.

  5. Patty, I have food grade cocoa butter on hand. Are the wafers just cocoa butter? This looks delicious. I have GOT to get myself some peppermint oil. Looks like it is time for me to look into Be Young Essential Oils. I wanted to also confirm that the Amazon links aren’t work for me.

An accidental discovery that we made… :) If you double the recipe and accidentally forget to put the leftovers away for a while (like a few hours) and then they get nice and cold in the fridge- You get White Chocolate Peppermint jello/custard :) It did separate, probably from the time at room temp before refrigerating… :)

  7. I finally made this – It was delicious!!
    I added the honey last to preserve as much of the enzymes as possible. I don’t have any special oils so I just used some regular food-grade peppermint oil (Frontier brand).
    I halved the recipe since it was just for me and used about 1.5 tbsp of the cocoa butter (no food scale). I also used 1 Jumbo egg – but just the yolk. I actually used the whole 1 tbsp of gelatin. I think it added some nice body to it.
    Amazing that it has no milk. I was tempted to add some but wanted to stick close to the recipe at least the first time. Patty do you think some milk would work?
